Here we have some basic recipes for the Shashlyk.

Per 1 neck:

Marinade:

  • Onions (3-4 per neck)
  • Pepper (1 Tsp)
  • Bayleaf (3 leaves)
  • Garlic (1-2-3 clove)
  • Paprika (1 Tsp)
  • Rosemary (3 branches)
  • Oil (2?-3? Tsp)
  • Salt (2 Tsp with hill)
  • Oregano (1 shepot)
  • Vinegar (2 Tsp of 70%) (another recipe - per kilo - 2Tsp of 9%)
  • Water (0.5- (1l for 1 DRY LEG))
  • Sugar (1 tsp) Optional:
  • Chily pepper (1 per neck)

6% vinegar - no water

Serving

  • Onions (5), cut half- circles – 1 tsp salt – 1 tsp sugar – 2? tsp 70% vinegar (another recipe: 6% vin watered down 1:1) – mix it

  • Salad

  • Ketchup

Preparation

Cut pork neck to cubes approx 2 - 4 cm thick and put into enameled pot.

Put on meat: salt, pepper, paprika.

Crush in mortar: oregano, bayleaf, pepper, chilly pepper (remove seeds) and garlic, salt? and oil (2 Tsp)…

Add also all crushed to meat.

Approx 10-12-15 mins till pork internal temp is 78 grad C. Constantly turning over each skever one by one.

Serving

With sliced onion and ketchup on side

Put on Rukkola salad with onion rings.
